Erik’s Cider

Fermentables

  • 5 gal. unpreserved apple cider – from Pine Tree Orchards.
  • 1.5 lbs. Light DME

Boil Additions

  • 12 whole cloves
  • 3 cinammon sticks

Yeast

  • 1 packet Red Star Cote do Blanc dry yeast

Other

  • 1 gal. water
  • campden tablets
  • irish moss

OG = 1.042

Notes

  • 10/2/03 – made starter. Added 1 campden tablet per gallon of cider.
  • 10/3/03 – boiled water w/ cinnamon, cloves, and DME for 20 minutes. Added irish moss at end of boil.
  • 1/29/04 – Bottled. FG 0.998. 4.15% ABV
  • 10/8/2004 – This cider turned out excellent. It took about 6 months for it to come around, but now it’s very crisp and refreshing.

Northern Brewer Bavarian Hefewiesen Extract Kit

Fermentables

  • 6 lbs. Wheat LME
  • 1 lb. Wheat DME

Boil Additions

  • 1 oz. Tettnang (60 min)

Yeast

  • WLP300 – Hefewiesen Ale

Notes

  • 8/15/03 – Made starter – 650 ml water + 1/2 c. wheat DME.
  • This turned out really well. I actually made it by request of the Williams brothers. I gave half the batch to them, which they promptly consumed with great pleasure. I’ll surely make it again. This also turned out to be my first instance of blowoff. You can see pictures here

Specialty Grains

  • 1 lb. Durst Medium Crystal

Fermentables

  • 6 lbs Munich LME
  • 1 lb. Amber DME
  • 3.3 lbs. NB Gold LME

Boil Additions

  • 1 oz. Spalt (60 min)
  • 1 oz. Spalt (60 min)
  • 1 oz. Spalt (60 min)

Yeast

  • WLP029 – German Alt/Kolsh

Notes
This turned out OK. I made a typical n00b mistake, and underpitched. For as high as the OG was on this batch, I should have used a starter. I ended up dumping most of this batch. The fermentation never really finished and it ended up being really sweet.

Northern Brewer Nut Brown Ale

Unfortunately, I don’t have any details of my brew process for this batch. I do remember that it turned out well, though. Nothing special – just a standard nut brown ale.
